A process for the production of a fiber-rich coffee product, and the resultant product. Partially extracted roast and ground coffee is contacted under conditions effective to extract a fiber-rich coffee extract which contains a high concentration of soluble fiber. The fiber-rich extract may optionally be subjected to ultrafiltration to provide a concentrated fiber-rich retentate. The fiber-rich products may be used to fortify coffee or other edible products with soluble fiber. The partially extracted roast and ground coffee is preferably obtained by a first, mild atmospheric extraction of roast and ground coffee.
