PURPOSE:To readily obtain the subject bean curd of uniform quality useful for producing bean curd in a small-sized container by taking soybean milk regulated to a prescribed concentration and a coagulant in a prescribed concentration in a container and then coagulating the resultant soybean milk. CONSTITUTION:Soybeans dipped in water are drained and water in an amount of 3-8 based on 1 soybeans is added thereto. The soybeans are then pulverized to provide 'raw GO' (pulverized raw soybean liquid), which is subsequently boiled to afford 'GO'. The obtained 'GO' is then squeezed to provide soybean milk and a coagulant prepared by dilution thereof with water in a prescribed proportion according to the concentration of the aforementioned soybean milk are taken in a container to coagulate the soybean milk and afford the objective bean curd. |
