PURPOSE:To obtain the subject additive excellent in palate feeling, taste and fanciness, useful for e.g. obesity-proof foods by making an additive to be used in e.g. raw rice cooking adhere to or incorporating such additive in a porous food material. CONSTITUTION:The objective additive can be obtained by making (A) an additive intended for uniform dispersion in cooking raw rice or raw barley [e.g. a fatty acid compound (such as caprylic acid) capable of binding to starch and retarding its digestion and absorption in the digestive tracts] adhere to or by incorporating such additive in (B) a virtually porous food material such as dried rice or barley. A cooker is charged with this additive together with raw rice or raw barley followed by cooking to obtain cooked rice or barley. |
