PURPOSE:To obtain a red alga extract having a characteristic texture and prevented in the scattering and losing of minerals by coagulating the solution of a viscous substance contained in red algae and subsequently freezing and denaturalizing the produced gel-like substance. CONSTITUTION:The solution of a viscous substance contained in red algae is extracted from the red algae with hot water, subjected to micro filtration and subsequently cooled and coagulated to produce a gel-like substance. The obtained gel-like substance is frozen at -3 to 80 deg.C for 0.1-24hr, and subsequently thawed without passing through a dehydration process and a drying process preferably at 0-80 deg.C for 0.5-24hr to afford the objective extract having an extremely preferable texture. |
