PURPOSE:To enable to extremely enhance the salty taste of a salt-containing drink or food and reduce the amount of the added salt without affecting the flavor of the food by adding a 3-8C saturated aliphatic monocarboxylic acid in a specific ratio to the salt-containing drink or food. CONSTITUTION:A 3-8C saturated aliphatic monocarboxylic acid such as propionic acid or butyric acid in a proportion of 0.01-1wt.% based on the weight of the salt contained in the food is added to a salt-containing drink or food, and further, if necessary, an sour such as acetic acid or malic acid is added to the food to extremely advantageously obtain a salt-reduced food enhanced in the salty taste of the food in an amount of 10-30% and useful for health. |
