PURPOSE:To accomplish the subject modification of lecithin excellent in oil splash-preventive effect, etc., and causing no browning on its heating at a low cost, by extracting crude lecithin of plant-origin with a lower alcohol and bring ing the crude lecithin into contact with a specific strongly basic anion exchange resin followed by distilling off the solvent. CONSTITUTION:Crude lecithin of plant-origin is incorporated with 5 to 10 vol. times of a lower alcohol (pref. 1-3C alcohol) followed by agitation at 60-80 deg.C for 10-30min to carry out extraction. The resulting extract is then brought into contact with a strongly basic anion exchange resin of acetic acid or bicarbonate type followed by distilling off the solvent, thus accomplishing the objective modification so as to contain 0.1-20wt.% of modified lecithin. |
