The invention relates to a dried potato product for producing potato dumplings and a process for producing the dried potato product. The aim of the invention is to create a dried potato product in which a rapid and uniform penetration of the water through to the centre of the dried product, added into the water for preparation, is ensured. This is achieved by the dried potato product being composed of small annular or tubular particles. The process according to the invention comprises pressing a dough known per se composed of raw and/or comminuted, dried and/or half-cooked and/or cooked potatoes by means of an extruder apparatus to give a tubular or thread-like extrudate, then slicing this extrudate into short pieces 0.5 to 2 mm or 5 to 7 mm long and then drying the annular or thread-like pieces thus obtained. |
