To recover heat, heated waste water from a dishwasher or washing machine is led out of a working container (2) and brought into heat exchange with fresh water which is to be let into the working container (2). In order to achieve an increased energy utilization in this case, the waste water is led out of the working container (2) into an intermediate store (12) and then brought into heat exchange with fresh water flowing in anew thereafter, when heated fresh water is required in one of the following steps.
