The starch is prepd. by (a) washing sweet potato and pulverizing with water, (b) hydrating the pulverized sweet potato in the decanter, (c) centrifuging the dehydrated sweet potato in the 1st hydrocyclone to obtain the high gravity material (I) and low gravity material (II), (d) re-centrifuging the obtd. (II) in the support hydrocyclone to obtain the high gravity material (III), and (e) mixing the obtd. (I) and (III), concentrating, dehydrating, drying to obtain the sweet potato starch in high yield.
