PURPOSE:To obtain the subject yoke not losing the original emulsibility, thermal coagulability, etc., of the yoke by adding a medium chain fatty acid triglyceride, etc., to the yoke, stirring the mixture, separating the yoke layer and the oil layer and taking out the yoke layer. CONSTITUTION:Yoke and a medium chain fatty acid triglyceride or a medium chain fatty acid triglyceride-containing edible oil (preferably palm oil) are mixed with each other, stirred, and subsequently divided into the yoke layer and the oil layer. The yoke layer is taken out. The same operations are repeated to provide the objective yoke. |
