The machine for making homogeneous bread has a micro- computer for controlling respective driving sections and built-in programme for performing sequential processes. the method performing sequential processes of kneading, fermenting, baking, comprises an aging detection step for delaying or finishing fermentation process by a means for detecting the swellig of kneaded dough in the fermentation process.
