Industrial prodn. of ascorbin oxidase enzymes by extn. from plants comprises use of gourds of type F (Cucurbita pepo) or other types of commercial quality. These are cleaned in running water, cubed and homogeneised at high speed. The homogenised compsn. is centrifuged or cleared, to separate the solid from the liq. phase and obtain a liq. plant juice. The juice is filtered and treated with NaOH to raise the pH and render the ascorbin oxidase enzymes completely soluble. USE/ADVANTAGE - The enzymes are used in biological oxidn.-retarding protective systems for foods of plant or animal origin, removing O2 and thus retarding the action of phenolases. Prods. with 5-70 enzyme units/ml. can be obtd.
