PURPOSE:To produce new dried processed egg yolk, being low-cholesterol dried egg yolk, slightly emitting an offensive smell during preservation. CONSTITUTION:Dried processed egg yolk has >= 5% lyso-ratio and <= 0.5% cholesterol content. The dried processed egg yolk is produced by treating egg yolk with an enzyme, making phospholipid contained in the egg yolk lysed, drying and subjecting the egg yolk decholesterol treatment with super critical carbon dioxide. |
