The strain and the method for its preparation are applicable in the food processing industry. They ensure maximum productivity and the high quality of the product: high lifting power, maltase activity and trehalosa content. The highly productive Saccharomyces cerevisiae RD-1 strain is isolated and cultivated through this method in the conditions of repeated fed-batch culture. The control of the concentration of the inhibiting substances during the dosing of the nutrient medium in the reactor is realised in 1-2 cycles. During each cycle, after removing part of the cultured medium, which is 25 per cent of the liquid phase, this quantity is substituted by adding 20-23 per cent of drinking water.
