PURPOSE:To obtain a difficultly digestible dextrin which has a high indigestible ingredient content and little gives off irritating and other odors by heating corn starch along with hydrochloric acid, hydrolyzing the resulting roasted dextrin with, e.g. alpha-amylase, removing a predetermined proportion of the resulting glucose from the hydrolyzate, and imparting specific properties to the remaining hydrolyzate. CONSTITUTION:Hydrochloric acid is added to corn starch and the mixture is heated to obtain a roasted dextrin. This dextrin is hydrolyzed with alpha-amylase and glucoamylase, and at least half of the resulting glucose is removed from the hydrolyzate. The remaining hydrolyzate is regulated so that the indigestible ingredient content in the ingredients (A) other than glucose is 90% or higher, the content of a glucose residue (B) having a 1 4 glycoside bond (from 1 to 4) in the ingredients (A) is 25-30%, the average mol.wt. of the ingredients (A) is 990-1,300, and the difference between a calculated value (Y) of the average mol.wt. of the ingredients (A) which is obtained using the equation (where X is the amount of (B) determined by a predetermined method) and a found value thereof is within 20% of the latter value. |
