<p>The moulding line comprises a 'U'-shaped distribution table surrounded by work tables; a roller conveyor operates between the branches of the 'U'. The pieces of meat are mixed to ensure uniform salting and are discharged into the shelf; they slide by gravity to fill the two arms. Operators working round the table fill empty moulds with the meat and place them on the conveyor. This takes them through a de-gassing chamber which improves the compaction of the finished meat and avoids the inclusion of air which would degrade the meat by oxidn. and cause black spots. After de-gassing, the moulds with their contents are passed to the press and finally placed on trolleys. The amt. of manpower required is reduced and the moulding of hams can be retionalised; the de-gassing process is partic. efficient whilst fitting perfectly into the moulding line.</p> |
