A punching device (1) for punching out the central joint (12) of poultry legs (11) which comprise upper and lower leg parts is described. Removal of the central joint means that such poultry legs can be boned very easily, by pulling the remaining stumps of bone from the upper and lower legs while holding back the meat. In order to be able to operate with a small punching pressure which prolongs the life of the transverse end cutter (5) of the punching tool designed as a hollow punch (4) and simultaneously to ensure that the punched-out part is separated reliably, the hollow punch is provided with a connection piece (7), by means of which the inside (8) of the hollow punch can be connected to a vacuum source. <IMAGE> |
