摘要 The present invention relates to a Saccharomyces sp. strain of accession number KACC93216P, which has excellent ability to degrade sucrose and has accession number KACC93216P, and to a manufacturing method of tangerine vinegar or tangerine wine using the same. Provided in the present invention is a novel yeast, which has excellent ability to degrade sugar, and particularly sucrose, and can perform rapid fermentation of alcohol. In addition, the yeast strain of the present invention can improve the efficiency of acetic acid fermentation by reducing time for acetic acid fermentation, even if the same acetic acid bacteria are used.
