PURPOSE:To prepare the subject TEMPURA (a gapanese cooking, coated with flour and then fried) having excellent preservability, taste, flavor, appearance and restorability and suitable for vegetables, etc., without causing browning of the food by subjecting a frying object to a specific treatment, applying a coating liquid and frying in a hot oil. CONSTITUTION:A frying object is immersed over a prescribed period in a hot water incorporated with two or more components selected from table salt, reducing agent, antibacterial agent and antioxidant, e.g. hot water containing 0.1-5wt.% of salt, 0.1-2wt.% of a sulfite, 0.01-2wt.% of acetic acid and 0.01-2wt.% of citric acid and the immersed object is washed with water. The object is coated or mixed with a coating liquid and the coated or mixed product is fried in a hot oil to obtain to objective TEMPURA. |
