摘要 The disclosure relates to an oven (10) and method for cooking solid foods. The oven (10) comprises an elongate housing divided into tandem cooking zones (11, 12) each with separate cooking (23, 48) and heating (22, 47) chambers. Food products are carried on a vapor pervious conveyor (14) through the cooking chambers (23, 48) as a distinct cooking process vapor is recirculated in each zone (11, 12) at different rates between the heating (22, 47) and cooking (23, 48) chambers. In one zone (12), the process vapor is circulated generally laterally of the conveyor (14) over the food in a turbulent mode and then recirculated for reheating in a path parallel to the conveyor.
