摘要 The present invention relates to a method for cooking braised chicken and, more specifically, to a method for cooking tasty and nutritious braised chicken by: cutting and steaming chicken meat; putting the meat in a vacuum chamber filled with a Hippophae rhamnoides L. extract and aging the meat more than two hours; and cooking the meat once again. The braised chicken cooked by the method for cooking braised chicken of the present invention: has a good meat texture since the Hippophae rhamnoides L. extract is completely soaked into the protein and fat of the chicken and moisture is partially soaked into the chicken meat by the vacuum chamber; and can be fully cooked and seasoned if not boiled for a long time since the moisture already has been soaked into the meat protein by the vacuum chamber, thereby being delicious.
