The invention relates to a method for the production of storable preservative-free fruit preparation containing whole fruit, by mixing freely rolling fruit with crystalline sugar or highly concentrated sugar solution and making the mixture of fruit and juice subsequently thermally keepable. After gentle juice formation, the fruit is separated from juice, the juice is at least approximately adjusted to the thickness of the fruit and then recombined therewith. The mixture is subsequently briefly heated by a microwave field, excited in an E01 mode, in a heating zone. The method is particularly suitable for fruit preparations made from white fruit, the properties of which remain unchanged. The fruit preparations obtained in this way can be used alone or as an ingredient of food products, for example yogurt, cottage cheese or desserts. |
