摘要 PURPOSE:To obtain a sweet jelly of Japanese persimmon having excellent color tone and appearance different from a sweet jelly of Japanese persimmon made of dried Japanese persimmon as a raw material without damaging a flavor of raw Japanese persimmon by using raw Japanese persimmon prepared by heating and concentrating finely cut pieces of Japanese persimmon under reduced pressure at such a temperature as not to homogenize the Japanese persimmon without reconstituting astringency. CONSTITUTION:Raw Japanese persimmon is made into a great number of finely cut pieces without being uniformly ground, the cut pieces are heated and concentrated under reduced pressure at such a temperature as not to completely homogenize the Japanese persimmon without reconstituting astringency to give raw Japanese persimmon, which is unevenly dispersed into dough of sweet jelly to give the objective sweet jelly of Japanese persimmon.
