The invention relates to a process and an apparatus for the preparation of squalene from residues of olive oil, four process stages being used, saponification, cleavage and esterification of the fatty acids and extraction by super-critical gases. A product which has been previously esterified by a non-acid-containing catalyst reaches the extraction by super-critical gases, which product is injected into a high-pressure extraction column having column zones which can be heated independently of each other. By means of this process and apparatus, a saleable squalene having a purity of more than 90% is obtained.
