A food processing vat (10) having an outer shell (12) and an inner vessel (22) to contain a food product with a chamber therebetween includes a contoured bottom (26) having a high point and a low point wherein the food product naturally gravitates toward the low point which a drain may be connected for draining the food product from the vessel. Agitation means in the vessel include a lower blade (78) assembly which is adapted to conform substantially to the contoured bottom of the vessel. Heating means disposed in the chamber between the vessel and the outer shell provide for uniform heating of the vessel and the food product contained therein. <IMAGE>
