A process for the preparation of phenylaldehydes, in particular vanillin by converting compounds having the formula (I) wherein R1 = H, OH, OCH3 and C1-4 alkyl, R3 = H, OH, OCH3 and C1-4 alkyl, and R2 = H, C1-6 alkyl, -CH2OH, -COOH, -OCH3 and -CH2O-R4, wherein R4 = benzoyl or C1-4 alkanoyl or R2 = -CO-CH2-CO-; the last radical combining two structures having formula I or its tautomeric isomers in the presence of the enzyme lipoxidase (EC 1.13.11.12) (also called lipoxygenase) into the phenylaldehyde compounds having the formula (II) wherein R1 and R3 have the meanings indicated above. |
