PURPOSE:To provide a new L-ascorbate saccharide derivative high in stability while giving direct reductivity, also capable of producing L-ascorbic acid on its ready hydrolysis in the living body. CONSTITUTION:The objective compound can be obtained by acting a carbohydrase or its combination with glucoamylase on a solution containing L-ascorbic acid and an alpha-glucosyl saccharide compound. The other objective applications relate to foods and beverages, antisensitizing therapeutic agents, or cosmetics each containing the compound of present invention.
