Process for the preparation of gelatine from bone powder, consisting in performing a first treatment of the gelatine with an acidic solution at a temperature below room temperature to solubilise the phosphates and then a second treatment with an acidic solution at a temperature of between 60 DEG C and 85 DEG C to isolate a broth from which the gelatine is extracted. Gelatine of type A of gel power higher than 300 blooms and with a gelling time of less than 100 seconds.
