PURPOSE:To improve glutinousness of marine paste product such as KAMABOKO (boiled fish paste) or CHIKUWA (a kind of fish paste) and to obtain a high-quality marine paste product by blending a ground fish material with iota-carrageenan and a Ca salt compound. CONSTITUTION:In obtain a marine paste product from A ground fish material, the ground fish material is blended with iota-carrageenan and a Ca salt compound to improve qualities of marine paste product. Calcium lactate, calcium sulfate, calcium chloride and/or calcium phosphate is preferable as the Ca salt compound. |
