PURPOSE:To obtain the subject seasoning free from irritant smell, having mild, mellow and soft taste and effective for controlling the physical condition by subjecting a sugar containing branched oligosaccharide to organic acid fermentation. CONSTITUTION:The objective seasoning can be prepared by carrying out organic acid fermentation (e.g. acetic acid fermentation, citric acid fermentation or gluconic acid fermentation) of a sugar containing branched oligosaccharide which is a nonfermentable sugar. |
