The method is composed of boiling soybean in boiling tank (1) by steam of 105 deg.C temp. for 45 minutes, cooling it to 24-25 deg.C suitable for aging, seeding yeast fungus of 1/2000-1/3000 on conveying soybean, mixing the fungus with soybean paste on feed screw conveyor (7) and supplying to the forming frame (8), cutting the formed paste to uniform sized blocks, finally storing them on the condition of humidity more than 90 %, 34-34 deg.C temp. for 48 hours. The apparatus comprises a boiling tank (1), a radiator (4) for cooling boiled soybean, yeast seeding device (6) for seeding yeast on belt conveyor (5), feed screw conveyor (7) for mixing and feeding soybean paste, forming section (8) having paste forming frame (8), cutting section (9) having piano wire (22) for cutting the paste block with uniform size on feeding the paste block. |
