PURPOSE:To obtain the subject tasty bean curd hard to crumble, high in nutritive value, suitable for marketing by vigorously agitating soybean milk and bittern in a soybean milk-coagulating box to effect uniform coagulation and by inverting in water the resultant coagulated product, which is then transferred to a mold box laid with a cloth and then put to dehydrating press. CONSTITUTION:Soybean milk and 100% bittern are put into a quadrangular soybean milk-coagulating box whose the upper surface is open, and the contents are agitated with an agitating plate to effect coagulation. The resulting coagulated product is covered with a cloth followed by a mold box to engage it with the coagulating box. The coagulated product, together with the combined box, is then inverted in water followed by drawing the coagulating box, and the coagulated product, i.e., bean curd left in the mold box is covered with a cloth and pressed and then cut, thus obtaining the objective bean curd. |
