PURPOSE:To obtain the subject rice retaining freshness and softness, excellent in palate feeling and long-term storage stability, suitable for frozen 'okowa' (steamed glutinous rice with red beans). CONSTITUTION:The objective frozen boiled rice can be obtained by incorporating, before or after boiling or steaming, (A) 1000 pts.wt. of rice with (B) 0.1-100 pts.wt. of fatty oil such as palm oil or tallow followed by freezing. |
