Prodn. of a shaped fish product, comprising fish skin at the outside and boneless fish flesh at the inside, involves (a) placing and compressing raw fillets in a casing which is closed at one end, such that the skin-covered fillets cover the interior surface of the casing with the skin at the outside, while skinless fillets fill the central space, (b) sealing the open end of the casing, and (c) freezing the product. |
