Aq. soln. sprayed on raw coffee beans supported on a grid in a downwardly tapering container swells the beans and extracts caffein into a base chamber. A pump in a connected conduit deliver caffeine-rich extract to the spray above a bed of activated carbon which extracts the caffeine, with liq. from below the bed then returned for use as soln. in the initial container. Decaffeinated beans are restored to initial moisture content. At least one of the process stages is performed in the absence of O2, and pref. in an inert atmos. of CO2, N2 or noble gas.
