A method and apparatus serve for detaching and releasing the fatty end 35 of a carcass 34, for example a pig carcass, the fatty end 35 being closed off with a solid frozen plug 36 and detached by means of a rotating, tubular circular knife 3. During the detaching operation a vacuum is created in the cavity of the circular knife, which acts on the plug 36 with a force directed outwards in relation to the carcass 34. The magnitude of the vacuum is selected so that the force can absorb the drive pressure from the penetration of the circular knife into the frozen and rigid tissue and meat parts around the fatty end, and furthermore overcomes the friction between this and the inner surface of the circular knife. <IMAGE>
