1. The method for release of citric acid from water solutions through extraction particularly from post-fermentation liquids, consisting in that the reaction is conducted with anhydrous cyclohexanone, or with water content not exceeding the concentration of saturation in ratio like 1:1 by volume of the aqueous phase to the organic phase, whereas the obtained extract is subjected to the retrograde extraction with water, or with water including cyclohexanone in quantities not exceeding the concentration of saturation, and then the extract is concentrated.
