PURPOSE:To obtain the subject buckwheat vermicelli, beautiful in appearance, suitable for happy events and excellent in flavor useful for health, etc., by mixing buckwheat flour which is a product of SARASHINA with wheat flour in a specific proportion, kneading the resultant mixture under specified conditions, extending the kneaded dough and finely cutting the extended dough into narrow strips. CONSTITUTION:A raw material of 70-80wt.% buckwheat flour which is a product of SARASHINA mixed with 20-30wt.% wheat flour is prepared and hot water at 100 deg.C is added to knead 25wt.% initial raw material. The residual raw material is then added to sufficiently knead the mixture by hands. The resultant kneaded dough is aged for about 10min and further kneaded to provide a kneaded ball, which is subsequently divided into two balls. An adequate amount of a ground natural substance (e.g. powdered green tea) is added to one of the balls and kneaded to provide a colored ball, which is superposed on the other white ball. The superposed balls are then extended to a suitable thickness by hands, further thinly extended to 1-2mm thickness by a rolling pin and finely cut into narrow strips to afford the objective buckwheat vermicelli. |
