PURPOSE:To efficiently optically resolve the subject derivative having a high purity in a state free from the deviation of the optically resolving ability caused by temperatures by hydrolyzing an N-acyl amino acid ester in the presence of a specific liposome at the phase-transferring temperature of a gel phase-liquid crystal phase. CONSTITUTION:An N-acylamino acid ester (e.g. N-dodecanoyl-D-phenylalaninep- nitrophenyl ester) is hydrolyzed in the presence of a liposome at its gel phase- liquid crystal phase-transferring temperature to efficiently optically resolve the amino acid derivative. The liposome is formed of a phospholipid (e.g. L-alpha- dipalmitoyl phosphatidyl choline), a nonionic polyoxyethylene surfactant [e.g. poly(10)ethylene glycol p-1,1,3,3-tetramethylbutylphenyl ether], and an active peptide catalyst (e.g. benzyloxycarbonylL-phenylalanyl-L-histidyl-L-leucine). |
