Fermenting section rests at least partially in a water bath, with an upper aromator, a cladding or shrouding to dampen the heat at least at the mantle zone of the base of the fermenter at the uppermost zone of the water bath. Cladding or shrouding is distributed equally round it, for the heat from the vaporising zone of the water bath. The cladding is pref. formed by circular rings, of a suitable metal or other material, or by a shrouding mantle to form a gap between it and the fermenter to be filled with a fluid with good thermal conductivity. The double mantle covers the whole base area and the outlet connection as far as the outer lid flange of the connection. The liq. is recirculated within the double mantle, and a coolant fluid can be introduced during the filling and/or emptying operations. ADVANTAGE - Prevents overheating of the fermenting unit, and baking of material at inner walls, in a simple assembly.
