PURPOSE:To provide a dried insoluble residue of soybean curd excellent in taste and keeping quality and suitable, e.g. for an additive to various kinds of foods by seeding a malt belonging to the genus Aspergillus to insoluble residue of soybean curd, proliferating it and reducing the water content to <=a prescribed value. CONSTITUTION:The objective dried insoluble residue of soybean curd obtained by seeding a malt belonging to the Aspergillus to insoluble residue of soybean curd, as strained lees of soybean by-produced in production of soybean curd, fried bean curd, dried soybean curd, soy milk, etc., propagating it and reducing the water content to <=10wt.%. |
