NEW OLIGO SACCHARIDE AND ITS PRODUCTION

PURPOSE:To provide a new compound useful as a food for health in a field of beverages and foods, etc. CONSTITUTION:An oligo saccharide in which a glucosyl group or maltooligonyl group is alpha-bonded to the beta-hydroxyl group at the 1-position of the glucosyl group at the reducing end of a lactose. The oligo saccharide is obtained by treating a solution containing a glucose residue donor and a lactose of an acceptor of the glucose residue with a cyclomaltodextrin glucano transferase.
