PURPOSE:To reduce the concentration of alcohol produced and obtain a non- alcohol fermented drink having excellent flavor and full of body by adding alpha-glucosidase to beer in fermentation process production. CONSTITUTION:In a fermentation process in beer production, alpha-glucosidase is added and fermentable saccharide in a saccharified liquid is converted into non-fermentable saccharide to efficiently provide the objective non-alcohol fermentation drink capable of satisfying both of cost and quality. Furthermore, malt is preferably used at a ratio of 1.0-100%. |
