PURPOSE:To obtain the subject compound in a large amount without any microbial contamination by reacting a glycoside containing cyclodextrin alone or the cyclodextrin and a branched cyclodextrin with a specific new cyclomaltodextrinase which is a high-temperature stable enzyme. CONSTITUTION:A starch saccharide is obtained by reacting a glycoside containing cyclodextrin alone or the cyclodextrin and a branched cyclodextrin with a new cyclomaltodextrinase having the following physico-chemical properties: Action; by carrying out hydrolyzing and transfer reaction of alpha-1,4- glucopyranoside bonds in a maltooligosaccharide having a higher polymerization degree than that of maltotriose, reacting also with cyclodextrins, respectively producing maltooligosaccharides and hardly hydrolyzing starch, amylopectin, glycogen, panose and isopanose. Optimum pH; about 5.5. Action optimum temperature; 60 deg.C. Inhibition and activation; inhibited with Cd, Zn, Hg, Mn, Cu, Ni, etc. Molecular weight; 106000 (measured by a gel filtration method). Isoelectric point; 4.7 (measured by an isoelectric focusing method). |
