PURPOSE:To obtain an agar gel having excellent transparency, uniformity and productivity and useful for MITSUMAME (boiled beans, etc., sweetened with treacle), gelidium jelly, etc., by casting an agar solution in a mold in the form of a thin plate, forcedly cooling the solution and cutting the gelatinized product to prescribed shape. CONSTITUTION:An agar solution 12 is produced by heating and melting agar or a mixture of agar and one or more additives selected from carrageenan, locust, xanthan gum, guar gum, tamarind gum, gellan gum, sodium alginate, pectin, etc. The solution is poured into a specific mold in the form of a thin plate and gelatinized by transferring the mold containing the solution to a cooling zone 16 to effect forced cooling of the solution. The gelatinized solution is cut to a prescribed shape to obtain the objective agar gel 17. Preferably, the cooling rate in the forced cooling stage is >=0.3 deg.C/min and the agar sol 12 is converted to the agar gel 17 in <=1hr. |
