发明名称 METHOD FOR RETORT TREATMENT OF MEAT
摘要 PURPOSE:To effectively prevent texture of meat from drying up in carrying out retort treatment of the meat by immersing the meat in an animal protein solution before performing the retort treatment of the meat containing an undenatured protein. CONSTITUTION:Meat containing an undenatured protein is immersed in a solution of an animal protein (preferably gelatin) and impregnated with the animal protein. The resultant meat alone or, together with other food materials, is subjected to retort treatment. When the gelatin is used as the animal protein in impregnating the meat with the animal protein, the meat is preferably immersed in a gelatin solution at 0.05-1wt.% gelatin concentration at ordinary temperature for 1-16hr.
