<p>The machine for cutting hard-crust cheese and dividing it into parts envisages, on an appropriate frame, two assemblies with vertical motion appropriately blocking the cheese for subsequent cutting. The cheese is brought into position, to be gripped by said assemblies, by a horizontally mobile carriage provided with appropriate jaws which take it from the station where the operator places it. The machine is provided with tools suitable for cutting the cheese and dividing it along planes orthogonal to the axis of symmetry of the same and along planes having said axis as common line. The cutting tools, consisting of cutting discs, roll on the cheese, cutting the crust without creating sharp edges which could cause damage during vacuum packing. The dividing tools consist of shaped blades which wedge themselves in through the surface cuts in the cheese to provoke detachment of portions of the cheese by fracturing, generating the known "rock cut". <IMAGE></p> |
