<p>A process for the production of a hypoallergenic whey protein hydrolysate involves hydrolysing a whey-based substrate with a proteolytic enzyme, thermally inactivating the enzyme and microfiltering the product of hydrolysis. The hypoallergenic whey protein hydrolysate finds use in the manufacture of infant formulae and special dietetic foodstuffs.</p> |
