PURPOSE:Highly thermophile fumarase is produced by the cultivation of a microorganism belonging to Thermus or Bacillus and the resultant enzyme is made to act on fumaric acid, thus producing L-malic acid. CONSTITUTION:A microorganism that belongs to Thermus or Bacillus and can produce highly thermophile fumarase, e.g., Thermus aquatics No.104 (FERM- 5150) or Bacillus licheniformis T-511 (FERM-5151), is inoculated in an enriched medium and subjected to liquid culture to produce a highly thermophile fumarase which works optimally at 50-80 deg.C in the medium. The enzyme is collected or the cells of the microorganism or its treated product are collected and they are made to act on fumaric acid at 40-80 deg.C to form L-malic acid in the reaction mixture and the L-malic acid is collected. |
