The present invention relates to a process and a device for the bacteriological treatment of containers intended to contain food substances and especially bottles for drinks, in particular wines. The device comprises a rinsing machine (10), a reservoir (14) containing a rinsing solution composed of filtered water of so-called drinkable quality and a predetermined volume of an oxidising substance, a supply circuit (15-17) for the solution, a return circuit (18-22) for this solution after each rinsing operation, means (23-26) for measuring the residual level of oxidising substance of the said solution and means (27-33) for adding a given volume of this substance in order to bring this level back to its initial value. The invention applies particularly to the treatment of bottles intended for wine production. <IMAGE>
